Ordering beef by the "side of beef" is the most economical way to buy.
1/4 Cow, 1/2 Cow or Whole Cow Orders $5.50/pound (dressed weight)
This cost includes cutting and wrapping. Dressed weight means the hanging weight before cutting, not the weight you will take home in meat packages.
The amount of trimming varies with how you select your cuts. You can maximize your take home weight by getting all the soup bones and organ meats that you can utilize.
Please note that we will share the organ meats between the 1/4 and 1/2 orders as best we can. Each 1/4 or 1/2 will get a share of liver if requested, but there is only one heart, one tongue, and one package of oxtail per animal.
About the Beef in 1/4 cow, 1/2 cow or whole cow orders
The beef has been dry aged for 2 weeks to avoid having to use plastic vac packs used in wet aging. While the meat loses some moisture weight, the flavor of dry aged beef is more concentrated and the meat more tender than with wet aging.
The cuts are wrapped in paper, except for the 1 lb ground beef packages, which are packed in plastic.
Our butcher flash freezes the wrapped cuts, and we will pick it up and store it in our freezers until the arranged time you will pickup from the farm.
1/2 Cow or Whole Cow Orders
Price for 1/2 Cow or Whole Cow: $5.50/pound (dressed weight)
1/2 cow orders will contain approximately 260-300 pounds (dressed weight) of meat and cost approximately $1430.00 to $1650.00. The weights, and therefore the prices, vary with the size of the animal. A 1/2 cow order will require approximately 6-8 cubic feet of freezer space, and a whole cow order will require 12-16 cubic feet.
To get the better price, you may absolutely share a 1/2 cow or whole cow order with friends and family. We require one main contact to complete and submit the cutting instructions and arrange for payment and pickup.

All quarter cow orders are filled with half front meat and half back meat. ¼ cow orders contain approximately 130-150 pounds (dressed weight) of meat and cost approximately $715.00 to $825.00. The weights, and therefore the prices, vary with the size of the animal. For those of you who have never picked up a 1/4 cow, you will need approximately 3-4 cubic feet of freezer space.
